At Covour, we believe coffee is a deeply personal experience. What one person considers an exceptional cup may be completely different from another’s preference. That’s what makes coffee so fascinating—it’s shaped by individual taste, memories, emotions, and moments.

For us, the most memorable coffees are not necessarily the ones with the most complex tasting notes. Instead, we are drawn to coffees that have a clear identity and a distinctive character. Sometimes it’s a bright fruit-forward sweetness, a rich chocolate finish, or a silky texture that lingers long after the last sip. The qualities we appreciate most often come together in a way that feels simple, yet are the result of countless factors working in harmony.

One of the most important influences on coffee’s character is its variety.

While coffee varieties are not widely recognized outside the specialty coffee world, they play a role similar to grape varieties in wine. Wine lovers often choose between Cabernet Sauvignon, Pinot Noir, or Chardonnay based on the unique qualities each variety offers. Coffee is no different. Every variety brings its own personality to the cup, shaping flavor, aroma, body, and overall experience.

At Covour, we often select coffees based on variety because it allows us to showcase those unique characteristics more clearly. We are especially excited when we can source and serve coffees that come from a single variety. While many coffees are created by blending different varieties to achieve balance and consistency, single-variety coffees offer a more focused expression of what makes that particular coffee special.

This approach helps us highlight the natural qualities that already exist within the coffee rather than creating something entirely new through blending. We want every cup to tell a story about its origin—the environment, the climate, and the people who carefully cultivated it.

Many outstanding roasters seek complexity above all else, and we certainly appreciate those coffees. Our philosophy, however, leans toward clarity and definition. We look for coffees that leave a lasting impression through one unforgettable quality: perhaps a vibrant berry sweetness, a smooth caramel finish, a floral aroma, or simply a feeling that stays with you.

Finding coffees like these is not always easy. Single-variety lots can be more challenging to source and often require greater care throughout the selection process. Yet we believe the effort is worthwhile because these coffees offer a level of transparency and authenticity that we find truly rewarding.

Ultimately, our goal at Covour is simple: to share coffees that express something genuine and memorable. Every coffee we choose, roast, and serve is selected with the hope that it creates a meaningful experience—one that remains with you long after the cup is empty.
